Rum is a strong spirit made from sugarcane, which is boiled down to a rich molasses, then fermented and distilled. While rum is always distilled from sugarcane, sugarcane syrup and sugarcane molasses it varies in colour and sweetness. Full-bodied, dark rum has a longer and more complex fermentation and double distillation process for a stronger flavour, while light rum has a shorter fermentation process and is often charcoal filtered to produce a clear, light-bodied, lightly sweet rum with a dry aroma. Golden rums are basically white rums which have been aged to produce a light golden colour.
