Collins

Glossary of Terms

A Collins is a type of mixed drink invented and named after barman John Collins of Limmer's Hotel in London, around the 1800s. The Collins cocktail was originally made with genever gin, sugar, lemon juice and water, while a later variation used Old Tom gin, which was sweeter and it gained the name Tom Collins. A Collins is usually made with Holland gin in London, but is often made from bourbon or whiskey in America. There are many other varieties of Collins including a Rum Collins (dark rum), Mike Collins (Irish whiskey), and Joe Collins (vodka).
